A quickie

Lemon Mustard Vinaigrette

  • 2 tablespoons freshly squeezed lemon juice (aka 1 lemon)
  • 1/2 teaspoon prepared Dijon mustard (e.g. Grey Poupon)
  • 1/4 teaspoon sea salt
  • 4 tablespoons olive oil

  • mix everything together. super simple!


    verdict: my three year old actually loved it. She normally only eats cucumbers smothered in Ranch, but she ate these happily. My oldest is anti-cucumber, but he ate them without too much complaining. I thought it made a perfect cucumber salad dressing, but didn't like it nearly as much on lettuce. A keeper though!
