Tomato Artichoke Chicken







Tomato Artichoke Chicken
The kids weren't big fans of this dinner, but husband and I thought it was pretty delicious. Definitely a repeat meal in the future!
Here's what you need:
chicken breasts
1 can (unmarinated) artichoke hearts
3 Roma tomatoes chopped
mozzarella
cooked pasta
basil (which I forgot, and really regretted)
Put uncooked chicken in baking dish. Mix the artichoke hearts with the basil and tomatoes, and place around the chicken.
Bake at 375 for 45 minutes or whenever your chicken is done. Add mozzarella and stick under the broiler until the cheese gets all nice and brown.
Top chicken and veggies onto pasta. That's it!
The liquid from the artichokes & tomatoes seeps into the noodles and adds some really great flavor, and keeps the pasta nice and moist.
