Healthy Pizza.

There have always been two words that were sure to annoy me: Healthy Pizza. You know how they're all, "skip the cheese" and...well, really I've never been able to get past the skipping cheese. I take my pizza pretty seriously. Fast forward to last night. I had some slightly stale whole wheat pita bread that I got on sale at the grocery store. I've made pizza with regular pita once or twice before, so I decided to do that, and to take the plunge on healthy pizza. And you know what? It was pretty good! Maybe not as good as the kind that drips pepperoni grease down your arm, but I guess not feeling guilty afterwards makes up for that. Definite winner! I want this all the time now. I even plan on having this for lunch today.

Start with:
-1 Whole Wheat Pita
-your favorite pizza sauce
-mozzarella

You can put whatever you want on yours. Here's what's on ours:

  • pre-cooked diced chicken breast
  • sliced onions
  • green peppers, chopped
  • zucchini, very thinly sliced
  • 1 clove garlic, chopped
  • a sprinkle of Mrs. Dash Italian seasoning
  • another sprinkle of red pepper flakes
  • chopped mushrooms
  • a few chunks of pepperoni
After adding all this I threw a little more cheese over the top!

I cooked mine at 425* for 6 minutes, and then turned the broiler on for 1 minute at the end.
